Ingredients:
3 T. peanut oil
1 onion, chopped
1/2 red bell pepper, chopped
2 t. chili powder
1 t. each of cumin, cilantro and oregano
2 lb. beef bottom round, cut into 1/2 cubes
2 c. crushed tomatoes
1 3/4 c. homemade beef stock or canned broth
1 T. jalapeno peppers, chopped
1/4 c. tomato paste
2 slices Canadian bacon, chopped
1 T. sugar
salt and pepper to taste
garnishes: Snyder's of Hanover Hard Sourdough Pretzels, broken into bite size croutons, chopped red, yellow and green peppers, sour cream, chopped scallions
Instructions:
Heat 2 T. of oil in Dutch oven. Add next 6 ingredients. Cook over medium-low heat for 5 minutes. Add remaining oil, and brown the meat over high heat, in batches if necessary. Stir in tomatoes, stock, jalapeno peppers, tomato paste, Canadian bacon, and sugar. Simmer uncovered, until beef is tender, about 1 3/4 hours. Covering if mixture becomes too thick. Season with salt and pepper. Serve chili in a large bowl surrounded by garnishes.
