1 ½ cups Snyder’s of Hanover Sweet & Salty Salted Caramel Pieces, crumbed in a food processor
20 ladyfinger cookies or leftover pound cake, sponge cake, or doughnuts
1 cup heavy whipping cream
½ cup sweetened coffee or espresso, chilled
1 lb. mascarpone cheese (can’t find it? – simply mix until smooth 1 lb. cream cheese, 1/3 cup sour cream and ¼ cup heavy whipping cream)
½ cup sugar
Whip the heavy whipping cream into a stiff peak stage.
In a separate bowl, mix the cheese and sugar until smooth. Fold in the whipped cream.
Soak the ladyfingers in the sweetened coffee for a few seconds, rotating to evenly soak on all sides. If you are using leftover pound cake or other, cut into 1” thick slices and toast in 350⁰F oven until golden on all sides – about 7 minutes per side.
Make the first layer of tiramisu by placing down a layer of soaked ladyfingers, with cookies side-by-side, followed by half the cheese mixture spread evenly. Then sprinkle half the Salted Caramel Pieces and top with a thin layer of cocoa powder. Repeat to create the second layer. Best to refrigerate overnight to let the flavors blend. Keep chilled until ready to serve.
